Off milk? Why it’s time to get on it
Everyone throws away goat, sheep and cows milk when it sours, but wasting this milk is a nutritional, planetary and financial mistake. We all need to be drinking off milk. We need to get on with off milk. It’s not off- it’s on!
- LACTOSE? As milk ages its lactose breaks down which is why it gets less sweet as lactose is the sugar. Sour milk is low lactose sugar which is great for blood sugar regulation and improving insulin (which reduces blood sugar) and dopamine (our brain pleasure chemical) sensitivity (so we get more energy from the sugar we do have and. more of a sugar high when we do have sugar). It is also great for those with lactose intolerance. The less sugar you have, the less you crave it and the sweeter things like sour milk taste. You can also add cinnamon and vanilla herbs to add flavours if you want. Don’t add sugar or sweeteners as these feed the bad bacteria in our gut and change our brain dopamine response and taste buds to make us want more sugar.
- PROBIOTIC. Sour milk is also fermented so is highly probiotic (full of lactobacillus cultures) and great for the feeding the good gut microbes but without all the lactose sugar which feeds bad bacteria. Sour milk pours good bacteria into us. These good microbes provide a gut barrier, preventing disease causing microbes from entering our gut helping to prevent gastrointestinal disease and gut inflammation. They also produce natural antibiotics and regulate our Treg cells which help reduce excess inflammation. They work via the gut-immune axis to strengthen our immunity and help us absorb nutrients from our food. So sour milk helps REDUCE IBS and prevent diarrhoea and bloating as it strengthens gut junctions and stops leaky gut like probiotic yoghurts and kefir does. Good bacteria also work via the gut-brain axis to increase production of key happiness hormones, improving mood, and the gut-skin axis to improve our skin health. They also produce small-chain-fatty-acids which give us extra energy and vitality. Sour milk is far cheaper than any expensive probiotic supplement or product.
- PROTEIN. Sour milk turns to curds and whey. It is like drinking whey protein powder which millions do. Sour milk is far higher protein concentration and we need protein to strengthen gut junctions (to help us absorb nutrients from our food effectively and prevent gut infections) and form muscle, skin, hair and brain chemicals. Protein helps improve looks and mental and athletic performance. Protein is also the most filling macronutrient so sour milk will keep you fuller for longer than non sour milk. Whey protein supplements are expensive. Drinking sour milk stops waste, helps your health and saves money.
- LESS PROCESSED AND CHEAPER. Lactose free plant based milk alternatives that many use for environmental reasons or lactose intolerances like soya or almond milk. However the plant based milks that are the same price as milk are milk alternatives and highly processed and full of emulsifiers. These milks can be fortified with calcium but its calcium carbonate which is less bioavailable than dairy milk and lower protein. The varieties that are just natural almonds and water or soya and water can be 2–4x as expensive as milk and hard to buy in more remote places. Oat milks are very high blood sugar spiking carbohydrates and sugar which can cause blood sugar lows which increase appetite and decreases focus, mood and sleep. Again oat milks are far less protein than sour milk.
- BETTER FOR PEOPLE AND PLANET. Perhaps the best way to reduce the carbon footprint of milk, reduce food waste and help the planet, and help people get healthier too and save money is to make more get ON low-lactose, highly probiotic, unprocessed, highly bioavailable calcium rich, super high protein sour milk.
